5 Things I love This Week!

I can’t believe that January is already more than halfway over! Time seems to go by faster and faster each year I’m alive. That quote by Andy Rooney certainly rings true“I’ve learned that life is like a roll of toilet paper. The closer it gets to the end, the faster it goes.” It’s been a great week here in my little spot in the world. Here are 5 things that I LOVE this week:

1.      My UP Band by Jawbone- I am obsessed with this. The wristband tracks your movement and sleep. You connect the band to your phone and the app displays all of your data. I have seriously been more on the move knowing that my steps are being tracked. What’s really neat is that you can have “teammates”, which are your friends and family who also have an up band. My mom, grandmother and some of my aunts have one and I love being held accountable for how much I move.



2.      “The Madison Ave” at Lindley Park Filling Station– This place has always been my favorite restaurant in Greensboro. They name most of the things on the menu after the streets in the neighborhood the restaurant is in. While this isn’t the healthiest thing on the menu, it is pretty light. Turkey, apple slices  and honey walnut cream cheese all piled together in between delicious buttered croissant makes for  a really freaking good sandwich if you ask me. Paired with a side of sweet potato chips, you can’t go wrong here. My mouth is watering now..geez.


3.      My NEW{ish} Michael Kors Purse– I’m so super excited about my new purse. Not much to talk about here except that I’ve been wanting one for a while and it just so happens a good friend was cleaning out her closet and sold it to me! J BAM—good deal! Heellzzz YESSSS. {that last little bit is what I said in my head when she handed it over to me}


4.      Our Fire Pit– One of my most favorite things to do is sit around a warm fire with some good friends and a good glass of wine. There is nothing like it.  Brian and I bought some stuff to make s’mores and I cannot wait to make them hopefully sometime this weekend. Gimme s’more of that!


5.      Salmon– I don’t know if you’re a seafood person, but I AM. I love all types of seafood…except for….well I can’t think of any I don’t like. One of my good friends Jessica gave me this recipe about a year ago and since then it’s been a staple in our house. Look out for the recipe next week!

RECIPE:Honey Mustard & Pecan Brussels Sprouts

So… one of my favorite vegetables is brussels sprouts. A lot of people aren’t huge fans, but I really believe that those people just haven’t eaten them the right way. I’m so excited to share this amazing recipe because I love it and we eat them at least once per week in our house. I promised I would share last week, so here it is.


 Here’s what you’ll need:

  • 2 bundles of brussels sprouts
  • 1/2 cup dijon mustard
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 1/2 cup chopped pecans

Here is what you’ll do:

Step one: Mix the dijon mustard, oil and honey.

Step two: Cut off the base of the sprouts and then cut the sprout in half.

Step three: Saute the brussels sprouts so that they are al dente then add the pecan and saute until roasted.

 Step four: Mix the brussels sprouts and the honey mustard concoction.

Step five: Lay tin foil in a baking pan and lay brussels sprouts flat on the tin foil. Bake at 375 for 15-20 minutes until caramelized.

The Essentials!

It was possibly the most freezing day EVER. Days like today make me reevaluate my wardrobe.I got to thinking, what the heck do you even wear when it’s 8 degrees outside!? I don’t know how you Northern folk do it on the reg. I’m pretty sure I looked like Nanook of the North. It was as cold as Alaska but we got through it.snowsuitAnyways……. Tonight, I put together some essentials that I think should be in every woman’s closet. This is so easy and i’m pretty positive that you have each of these in your closet. If not, its not going to be too hard for you to find them.

Some time ago, when I first started this little blog I wrote a post that I look back to every once and a while to remind myself where I want to be and how far i’ve come. After the holidays, I feel very fluffy. It sucks so bad.

But this gives me hope:

Someone once said “You can have anything you want, if you are willing to give up the belief that you can’t have it.” I couldn’t agree more.  I’m a huge believer that you can do anything you want as long as you simply put your mind to it.

 I haven’t always been this way. In fact, I was probably the opposite. I was the ultimate “negative nelly.” Sometimes, in life, change is what you need to catapult yourself into the right direction and change your perspective on everything. About a year ago ( try almost 4 years ago) I had a huge change in my life. ( Looking back on the past 4 years, this change was the best thing that has ever happened to me.) I was in a relationship for a really long time and we broke up. I thought that I was unhappy with that person, however, in reality, I was utterly unhappy with myself.

I was determined to change this. As day by day passed by, I started to believe in myself again. I got rid of that negative and sorry attitude and changed it to an “I CAN do this attitude”.

One of my biggest goals for the past 6 or so years ( try 9 years) has been to lose weight. I gained not only the “freshmen 15″ but then the sophomore, junior and senior 15 as well.  My attitude was always , “ahh I have so much to lose, I can’t do this.”  I would automatically be defeated before I even started TRYING to lose those extra pounds.  Well in 2010, I told myself that I am determined to lose this weight and become happy with myself, Lauren Elizabeth.  I would write in my journal:

“Lauren, you CAN lose this weight”
“You ARE beautiful”
“You CAN accomplish your dreams”
“You ARE successful”
“Lauren, you CAN do whatever you put your mind to “

Slowly but surely, I started to actually believe what I was writing.  In my mind, the first step in accomplishing a goal is believing in yourself. If you believe that you can’t accomplish something, then you never will.  So look on the bright side of life, know that you can accomplish your dreams and don’t settle for less.
